Eating at the Right Time: For years, healthy eating advice has largely focused on what we eat how much sugar, fat, protein or fibre is in our food. But emerging research suggests that when we eat may also have a significant influence on health.

This field, known as chrononutrition, examines the relationship between food intake and the body’s internal biological clock. Research increasingly suggests that our metabolism does not work identically throughout the day. The body generally handles food differently during the daytime than it does late at night.

That raises an important question: could eating a large dinner late in the evening be working against our biology?

The body clock and food

Eating at the Right Time: Our bodies operate according to a roughly 24-hour circadian rhythm that influences processes including sleep, hormones, digestion and metabolism.

According to Professor Frank Scheer of Brigham and Women’s Hospital, we are biologically different in the morning and evening.

Eating when the body is preparing for sleep can create what researchers call circadian misalignment a mismatch between the timing of food intake and the body’s internal clock.

One of the clearest examples involves blood sugar.

A 2022 study involving more than 800 adults found that people processed a glucose drink less efficiently when they consumed it one hour before bedtime compared with four hours before going to sleep. Those who consumed it closer to bedtime had higher blood sugar levels and produced less insulin.

The hormone melatonin, which rises as the body prepares for sleep, appears to play an important role.

“When you eat when melatonin is elevated in the evening, your glucose control is going to be impaired,” Scheer explained.

This may have implications for long-term metabolic health, particularly because some people carry genetic variations associated with a higher risk of type 2 diabetes.

Earlier meals may help with weight management

Research cited in the article found that people who eat later may feel hungrier the following day because late meals can affect hormones involved in appetite and fullness.

One hormone affected is leptin, which helps signal to the brain that the body has had enough food. Later eating has been associated with lower levels of leptin.

There are also indications that eating later can influence how the body stores fat.

A study involving nearly 1,200 adults found that later eating was associated with a higher body mass index among people who already had genetic factors associated with obesity.

This does not mean that eating late automatically causes obesity. Rather, the evidence suggests that meal timing may be one factor contributing to weight regulation, alongside food quality, quantity, physical activity, sleep and genetics.

Is breakfast more important than dinner?

The research also raises questions about the traditional pattern in countries such as the UK and US, where people may have a relatively light breakfast and lunch but a substantial evening meal.

The Spanish tradition is almost the opposite.

The familiar saying is:

“Have breakfast like a king, lunch like a prince and have dinner like a pauper.”

In Spain, lunch is often the largest meal, while dinner may consist of relatively light foods.

There may be biological reasons for this pattern.

A study involving more than 100,000 people in France found that people who ate breakfast later had a higher risk of cardiovascular disease.

Researchers also found that a longer overnight fasting period achieved by finishing dinner earlier rather than simply delaying breakfast—was associated with better heart health.

What about late-night eating?

Late-night eating may be particularly problematic because it occurs when the body is moving towards its sleep phase.

As melatonin rises, the body’s ability to process glucose can decline. This means that the same meal may produce a different metabolic response at night compared with earlier in the day.

This does not mean everyone must completely avoid food after a particular hour.

People’s schedules differ, and factors such as chronotype, work patterns and sleep schedules all influence the ideal timing of meals.

For example, people who work night shifts may have very different eating patterns from people who work during the day.

Are you a ‘lark’ or an ‘owl’?

Not everyone has the same biological clock.

Some people naturally wake early and feel most energetic in the morning—the so-called “larks”.

Others are naturally more alert later in the day the “owls”.

This can influence eating behaviour.

Morning-oriented people tend to eat earlier and may have better insulin sensitivity earlier in the day. Evening-oriented people are more likely to delay meals and consume more energy-dense foods later.

Researchers therefore suggest that people who regularly eat late could benefit from gradually moving their evening meals earlier, rather than attempting a sudden dramatic change.

Sleep matters too

Meal timing cannot be considered separately from sleep.

Poor sleep can influence hunger and cravings, making people more likely to overeat or choose energy-dense foods.

This creates a potential cycle:

Late eating → poorer sleep or circadian disruption → increased hunger and cravings → poorer food choices → weight gain.

However, the relationship is complex, and not every person will experience the same effects.

So when should you eat dinner?

There is no single universally “best” dinner time.

The practical recommendation from the research discussed in the article is to:

  • Eat meals at regular times where possible.
  • Make your largest meal earlier in the day.
  • Eat fibre-rich carbohydrates such as whole grains, beans, peas, lentils and fruit earlier in the day.
  • Choose a lighter evening meal, particularly one containing a good source of protein.
  • Try to finish dinner at least three hours before going to bed.
  • Avoid routinely eating large meals immediately before sleep.
  • Pay attention to your own sleep schedule and chronotype.
  • Prioritise adequate, good-quality sleep.

For an evening meal, foods containing protein—including chicken, salmon and tuna may be useful, while nuts and seeds can also form part of a balanced evening meal.

The bigger lesson

The emerging science of chrononutrition does not suggest that the traditional advice about a balanced diet is wrong. Rather, it adds another dimension.

What you eat still matters enormously but when you eat may matter too.

Instead of consuming most of our calories late in the evening, the evidence increasingly supports a pattern in which more food is consumed earlier in the day and dinner is lighter and sufficiently far from bedtime.

So, if you normally eat dinner at 9 or 10pm and go to bed shortly afterwards, moving the meal earlier may be worth considering.

The key message is not that everyone must eat dinner at exactly 6pm. It is that your body clock should have time to wind down before you go to sleep.

In short: there isn’t one perfect dinner time, but finishing your evening meal around three hours before bedtime and making it lighter than your earlier meals appears to be a sensible approach based on the evidence presented.
